Buds begin forming in late January or early February, and the blossoms generally open in April. As it takes many months for the orange fruit to develop and mature, you can sometimes see trees laden with fruit that are also in full bloom.

This raw unfiltered honey tends to crystallize rather quickly, but this is a natural change that is easily reversed by placing the jar in some hot water (110 degrees or so).
